In today’s post I am sharing a recipe which my Mom
used to make and according to her she learnt it from my aunt, so thank you Mom
and Bua for the inspiration. It used to be a mildly flavoured savoury dish made of Semolina (Suji) and
Cottage Cheese (Paneer). Though it was a tasty dish
but as my kids like little bit of spice in their food so I tweaked that dish to
their liking and here is the result.
People who are not fond of spicy food they can also enjoy this recipe by omitting red chilly flakes.
This recipe can also be made in its original avatar ,just by excluding bell peppers , sweet corn and various seasonings.

1 and 1/2 tbsp. Ghee or any kind of cooking oil
1/2 tsp. Garlic bread seasoning,
1/2 tsp. Basil
1/2 tsp. Oregano
1 and 1/2 cup of water
Salt to taste
METHOD:
1). Put a pan on your burner and as it heats up add
ghee/ oil to it. After ghee melts add chilli flakes, oregano, basil and garlic bread seasoning to it.
3). Add your Semolina (Suji) and again sauté on medium
flame for a minute and a half .we don’t want semolina to change colour.
4).Grind your boiled corn kernels to a coarse paste
and add to the above mix along with crumbled paneer .Give it a nice mix and add
salt to taste.
5).Now add your water and mix till it gets absorbed
.Switch off your burner. Allow this mix to cool down a bit. Amount of water may
need to be adjusted because of different quality of semolina. Basically we want
a halva like consistency and for those of you who aren’t familiar with halva (,
it’s a popular Indian dessert.) the consistency can be compared maybe with thick
cake batter.
6). Grease a square baking tin or a serving tray or
even a dinner plate will do. Grease it with oil or ghee and dust it with
Semolina (Suji) .Add your mixture to it and pat it down with your hand or
spatula to flatten it. Now spread some more S
uji on top. Keep your tin in
refrigerator for at least 30 minutes.
Take out all squares and put on a well-greased shallow frying pan and switch on
you gas .let it fry on one side for a minute or until it starts getting
slightly brown.
5). Take it off the pan and serve with green chutney
or tomato ketchup.
